Pu-Erh Tea

Pu'er tea is unique in that is can be considered a post-oxidation tea. A post-oxidation tea is when the tea leaves undergoes the same process as a black tea but then after they are dried and rolled they undergo a microbial fermentation process to create a wide variety of complex flavors. Interestingly pu'er teas, unlike all other teas, can actually increase in value with age which is why some will come labeled with the year and region they were produced in.
